How does it work?

The basic concept behind a Galileo Thermometer is that as the temperature of the air outside the thermometer changes, the temperature of the water does, as well. As the temperature of the water changes, expanding as it gets warmer or contracting as it gets cooler, the density of the water changes, too. Sense the density in the bulbs cannot change (they're completely full with water and oil), they will float or sink depending on the water's density. The bulb that sinks the most indicates the approximate current temperature.

What does it teach?

The relationship between the water's ever changing density and the unchanged density of the bulbs is a great display of density. Density is a measure of how much matter is in a fixed area and is calculatable by mass ÷ volume. The Galileo Thermometer is also a great way to observe how temperature effects air pressure as well as density.
